Protein Pancake - Muffin style
The pancakes that changes the game for me and for those trying them out
Over the past year I have been obsessed with pancakes. It started off as a weekend treat and has since then become my secret hack to making everyday and running food a tad more luxurious. Whilst I still make the pancakes only a couple times a week they still are very much what I look forward to every time I have them and I have gotten so many compliments on them when friends and family has been over.
So here’s the secret to my pancakes made in a muffin form (who wants to stand in the kitchen for hours? Not me so I found a hack to make it quick and simple) Read along and try the recipe and create that additional luxury feeling before your next run.
You need:
1 dl Protein powder / Protein pancake mix
1 Egg
pinch of Salt
1dl Flour
0.5-1 tablespoon Honey
+/- 5-6dl Oat Milk (depends on how running you like your batter to be)
Oil / butter for the muffin form
Additional:
0.5 teaspoon Cardamom
0.5 teaspoon Cinnamon
0.5-1 teaspoon Vanilla sugar

Whisk
Bowl

Traditionally you would make pancakes on a pan but I like to make things quick in the kitchen so when I gave the muffin form a go and made my pancakes in the oven like muffin style … well I simply never turned back to the pan since then as I can save so much time by just popping the batter into the oven and then wait for the pancakes to be done.
How to prepare the pancakes:
Put on your oven to 200 Celsius degrees on the heating setting of heating from under and above.
Put all ingredients into a bowl. Add the egg and half of the oat milk.
Whisk it all together and then add the rest of the oat milk to the liking of yours. Here you can play around on how much you put. Sometimes I like firmness in the batter so I add les oat milk and sometimes I like it more running. In the end both ways work.Spray your muffin form with oil or butter - just enough to keep the batter from sticking to the sides of it.
Pour the batter into the form and then into the oven.
Let cook in the oven for 10-15min depending on how effective your oven is.
When the pancakes have a nice golden colour take them out and serve with jam or for a salty version feta cheese.
Especially during winter time the cardamom and cinnamon makes all the difference to the pancakes and the serving will hold you satisfied for up to 2h (again depending on your metabolism). I find these pancakes perfect on the weekends over a slow morning before hitting the running paths or the gym.
Mind, I know some protein powders aren’t good for oven dishes so be mindful of what you use. I haven’t had much problems with the traditional powders in this batter so far but always better to be safe than sorry.
